Rainbow Light-Bite Pizza

I absolutely love pizza – it is the ultimate comfort food in my opinion! But at 300 calories a slice, a Domino’s pizza is not something I regularly include in my diet. Whilst waitressing at The Forresters in Fleet, I discovered the recipe for this amazing ‘light bite’ pizza and added some super food toppings for an extra health kick. Enjoy!

Ingredients:
1 tortilla wrap (wholemeal, spinach, tomato, plain flour…)
A healthy squeeze of tomato passata
1/2 of an avocado
1/2 a red pepper
A few stalks of tender stem broccoli
3 slices of Quorn ‘chicken’ slices (or whatever protein you prefer)
~20g Mozzarella cheese
15g Halloumi cheese
1 large free range egg

Method:
Pre-heat the oven to 180°C
Spread the passata sauce on the tortilla
Chop your vegetables and quorn and spread over your tortilla
Grate your cheese and sprinkle over your tortilla
Crack an egg in the centre of the tortilla (I made a little protective ring of peppers to stop the white running)
Bake for 10-15 minutes in the oven
Cut, serve and enjoy!
