Healthy Banana and Date Loaf

I am such a sucker for anything sweet and I find it almost impossible to say no to cake. Which is fine for a little treat but when your office brings in sweet treats on a daily basis, it’s a bit of a test of the will-power. I made this healthy but delicious banana and date so I can satisfy my sweet tooth but still stick to a mostly clean diet. Enjoy!

Ingredients:

250g self-raising flour (I’m sure you could probably use other, healthier flours too!)
50g protein world, slender blend
1 tsp bicarbonate soda
1 tsp nutmeg or cinnamon
10 pitted dates (chopped up)
2 or 3 tablespoons of honey
250ml milk (I used almond)
1 whole egg and 2 egg whites
2 bananas (mashed up)
And then whatever you’d like to add to serve; nut butter, honey…whatever you want!

Method:

Grease and line a couple of baking tins and start pre-heating the oven at about 180°C.
Mix all the dry ingredients.
Chop up the dates to whatever chunkiness you like
Mash the bananas
Add the wet ingredients to the dry ingredients (if you prefer a smoother loaf, you can whiz the mix in a blender/processor here)
Pour the mix in to tins and bake in the oven for 15-25 minutes.
Cut, serve and enjoy!
